Now this is a true classic salad in Denmark. It is a carrot salad and it is a great little salad that I loved so so much as a child! I still love it, but because of the sugar I don’t eat it so much anymore. But I will tell you one thing – it goes very well with lasagna!
Now this requires a small amount of ingredients:
2 pounds Carrots
1 cup Raisins
2 tbsp Sugar
2 tbsp Lemon Juice
And there are very few and easy instructions as well:
1. Peel the carrots
2. Grate the carrots
3. Add the raisins, lemon juice and sugar
4. Mix it around and leave for at least 30 minutes before eating
I know this is a very short recipe and not the most healthy recipe. But sometimes you just need something cheap and easy when you want your veggies but you don’t have them. Carrots are super cheap and I think this is one of those salads that can get people to eat more veggies! And the sugar and lemon juice can actually be skipped here, and that’s a way to make it healthier.
