Lentil Bolognese

So I found a very old draft I made for this post:

I’m Quite fascinated by this Meatless Monday idea. This is fourfold: The enviorment seems to like it, my wallet seems to like it, my scale could like it and it is a great excuse for me to test a whole new field of cooking.

I have some vegetarian recipes on my blog already. To be honest, the recipe that triggered this Meatless Fascination was the Indian wonder Aloo Mattar! This is truly a dinner that you can eat without feeling the lack of meat – and now I’m going to find more of those dinner opportunities.

A lot has happened since then and I like the story these old drafts tell about me. I just love the idea that every human being has a life story to tell that is just as detailed and filled with memories, experiences, opinions and beliefs as my own. This is probably why I love the internet so much – especially youtube. It’s a little glimpse into someones life. It’s fascinating. I feel like whenever I remind myself that everyone else is as complex a human being as myself I just develop greater tolerance for people who are different than me. Do any of you feel the same way?

About the bolognese: I actually never got to make it back then – but since going vegan I just had to try it. So this Tuesday, when I was actually supposed to study for my final exam, I decided trying a new recipe was a perfect way to procrastinate. Soup № 2: Minestrone!

I like soup! But I will share this deep dark secret with you: I don’t make them myself. I almost always end up with the ready-made frozen soups from the Danish Brand Mou – cause they are divine! Especially the traditional Danish “clear soup with meat- and flour balls” – as it translates directly – is just much better when bought ready-made.

With this secret out – I am still me – and that means I will still have to try making everything myself – just for fun. In the fall I had a vegetable mania and in that period I tried making Minestrone for the first time. Then time flew by and just before winter ended I realized I should try making it again. So I did, and this is the recipe for it! But one thing is important to take note of! Minestrone shouldn’t be the same every time. My recipe is split in two, a base and the filling. The base is delicious and the vegetables can be changed around at your greatest desire.

Yummy Tomato Sauce & Gnocchi!

So, I actually have made Gnocchi before and I have made Tomato Sauce before and it has all tasted very nice. But I have never written down a recipe, calculated the calories or evaluated with my husband what could be improved. But now I have!

Just a few weeks ago we were having some leftovers for dinner. Now, this is true: We are still eating American Meatballs because I made such a bunch. But hey, they are pretty darn good, so why wouldn’t we? So we were having meatballs, and we wanted potatoes along side of them. But the potatoes we bought (on sale, how stupid) were not good at all. So we decided to mash them up and make them into something beautiful! And that we did! That we did! On top of that I happened to make an extraordinarily great pasta sauce that night, so I think it deserved a spot since Gnocchi is so easy, it barely counts as a recipe itself.

Pork ala Italia

This is a very popular meal in my household and with everywhere else I have ever made it. I have never met someone who didn’t like this meal! That says a lot I think.

I can’t argue, that this is not very Italian! But I am sorry, I didn’t name it. But aside from the name this dish is awesome, it has a lot of ingredients and there are thousands of alterations at the end!

And I know – this doesn’t look that much like the gastronomical wonder it is. But Hey! Give it the benefit of the doubt.

Potato lasagna

I’ve made this dish for a lighter version of a very old friend.. Lasagna!

We LOVE lasagna.. Actually we love lasagnette.. But pasta is kind of a no go in this household at the moment, so I went to another old and dear friend. The potato.

We love potatoes! Actually, my Husband loves potatoes. I’ve mentioned before: My husband likes classic Danish Cuisine. The definition of Danish food is potatoes. Not sweet potatoes like the Americans. Nope! We like white or yellow potatoes here! We love to boil them, and boiled potatoes with brown sauce is used with all kinds of meat in Denmark. You’ll see much more of that in the future on the blog.

What I was saying: We love potatoes and we put potatoes in everything. Now including Lasagna.

I must warn you though: You won’t fool anyone! This is not a Lasagna. We could choose to reefer to this dish as “unmashed Shepards Pie”, that would be just as accurate. Pasta is pasta, and potatoes aren’t gonna fool anyone. That being said, this is still very delicious, and you should make it! Tonight!
