Rice Taffel – Vegan

I have decided to try virtually any recipe vegan style. I’m not gonna address myself as anything more than a conscious eater. But I do think the most conscious choice is vegan – if you don’t care about taste or that stuff. So i’m gonna se which recipes work vegan style and which recipes doesn’t.

And I’m going to start out testing my long time beloved Rice Taffel. It is normally eaten with Chicken, Turkey or Pork – but I’m gonna try potatoes and chickpeas instead. That seems like a good place to start. To be true to my purpose I have just copied my old recipe and then changed the non vegan products. Because that is the true test – right? Old Classics: Rice taffel

Today I am going to share with you one of my childhood favorites! Rice Taffel. According to Google translate a Taffel is “Banquet” or “Royal Table”. Contrary to this translation, this is very easy and down to earth food, that is perfect for a dinner party in the 90’s. The “Taffel” is simply referring to the many many different toppings that can be eaten with this – but you will understand much better when you read the recipe.

So it is a little retro – but that doesn’t mean the taste is bad – does it? Well I like it! And for that reason I am going to share this with you – cause you will like it too!

Chicken Tikka Masala

I have looked at so many recipes for Chicken Tikka Masala, but they were all to much work. Always, with the fennelseeds, the yoghurt, the hours of marinading and the boneless skinless chicken thighs, that doesn’t sell in Denmark.

Come on, I just want an easy fix, so I watched a lot of blogposts and youtube videos and got an idea of what a Chicken Tikka Masala should contain and what could be skipped without ruining the final result.

I have made this twice now, and my husband, my friend, my dad and even my mom likes it. That is something.

Soup № 1: Curry, Coconut & Chicken!

Just this Thursday night I was so in the mood for soup. It’s fall in Denmark and that means soup weather. I’ve tried potato-leek soup, minestrone soup, chicken soup, carrot-ginger soup and so on. But I never really tested any curry soups myself. And that is weird since I’ve always loved eating them. And so the research began. Last week at work I tasted a Curry/Coconut soup, so I already decided, that this soup was gonna have coconut milk in it. Oh boy, the internet did not have anything of what I was looking for – so I made my own recipe! And I think it turned out great. Only thing is that I didn’t put enough coconut milk in – so I adjusted that for this recipe.
