Frozen Yogurt

This is the time for Frozen Yogurt – right? Well this morning we build a snowman and then we stayed in being warm and fuzzy. Yeah, I’ll admit it is not really the season for Frozen Yogurt, but I wanted to start testing recipes early this year, so I would have the perfect recipe on the day that summer arrives!

Frozen yogurtNow I have always liked lemon in everything. I love the Tart au Citron – the french lemon tart with meringue, Lemon curd goes well with basically everything and I could continue.

But that also means I will update this post with new fine-tuning and exiting flavor combinations all the time up until we get bare-foot weather in Denmark! And that can be a while!

The recipe is as follows:

2 cups greek yogurt 2 %
Zest from 1 organic Lemon
1/4 cup freshly squeezed lemon juice
1½ oz honey

Mix it all together and let it freeze in your ice cream maker and then in your freezer.

You could choose to serve this with lemon drops like when you go to the shop or you can use a little lemon curd to make it a lemon sundae. What I did was boil 1 cup water and 1 cup sugar into syrup with the zest of one lemon. Once it was boiling I strained it and added the juice of one lemon and let it thicken up in the fridge! That was very sweet and also very delicious.

This makes only 92 kcal pr 100 grams witch is pretty neat.
